3 eggs
100g of Mesquite Blossom Honey
200g ricotta cheese
200g fresh raspberries
Fresh mint leaves
Preparation
Separate the yolks from the whites of the 3 eggs. Place the 3 yolks in a pot along with the 100g of the honey and cook over low heat for 5 minutes so that they are not raw. Add 200g of ricotta cheese and beat well, letting it cool.
Beat the 3 egg whites until foamy and fold in the honey mixture and leave it cool in the refrigerator. After 1 hour, serve the mousse in a cocktail glass and decorate with 4 fresh raspberries and a fresh mint leaf.
