Preparation:
Wash the pumpkin well and cut it into medium-sized pieces, leaving the peel and seeds. The peel helps it hold its shape during cooking and gives it a unique flavor. In a large pot, place the pumpkin chunks, flesh side up. Add the brown sugar, Ceimayá’s Mayan Honey: Tsitsilché Blossom, cinnamon, cloves, and water. If using orange, place the slices on top of the pumpkin to add a citrus and aromatic touch. Cook over medium heat until the brown sugar and honey are completely dissolved and it begins to boil. Be sure to check every 20 minutes and bathe the pumpkin pieces with the syrup that forms so that they absorb the flavor well. The pumpkin should be soft but not mushy, with a thick syrup.
