INGREDIENTS:

  • 1/2 lb. arrachera (flank) steak
  • Sea salt and fresh black bell pepper to taste
  • 1/2 cup apple cider vinegar (Virginia)
  • Virginia butter (to taste)
  • 1/4 cup Mayan Honey: Tsitsilché Blossom

PREPARATION:

Heat the honey over medium high heat for 5 minutes, until it acquires a dark brown color. Add the apple cider vinegar and cook for 10 to 15 minutes more, stirring, until the sauce has the consistency of a light maple syrup. Remove from heat and add a pinch of salt and pepper and let stand.

Marinate meat with sea salt and black pepper and let stand at room temperature for 15 minutes. Grill the meat for 10 to 12 minutes. Add a pat of butter and let it rest for 5 minutes. Finally, serve the warm meat bathed in the apple-honey sauce.
