Ingredients:
- 10 Corn
- 1/4 cup of Ceimayá’s Mayan Honey: Tsitsilché Blossom
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/8 teaspoon Anise Seeds
- ¼ teaspoon salt
- 22 Fresh Elote Leaves
Preparation:
Place the steamer over low heat. In the food processor, grind two cups of tender corn for two minutes, then add the rest of the corn and grind for two more minutes until you get a loose paste. Add the Ceimayá’s Mayan Honey: Tsitsilché Blossom, baking soda, anise seeds, cinnamon and salt to the paste and blend until smooth. Spread butter on the corn husks and place a heaping tablespoon of dough in the center of each husk. Fold the leaves around the dough, leaving room to inflate. Arrange the tamales in the steamer and cover with more leaves, a towel and a sheet of plastic wrap. Cook the tamales on low heat for one hour, or until the dough is fluffy.
