Ingredients:

– Brown rice

– Zucchini

– Garlic & Onion

– Green chili

– Mushrooms

-Carrot

– Herbs

– Olive oil

– Amaranth

– Ceimayá’s Forest Honey: Orange Blossom

– Salt and Spices

 

Preparation:

First, cook the rice for 1 hour before adding the vegetables. To prepare the rice, put water to boil and add 2 portions of previously soaked rice (in this case it is brown rice), also add some chopped garlic and onion and salt. Add 2 tablespoons of olive oil. Then, chop the garlic and onion, mushrooms, zucchini and carrots. With everything chopped and the pan on the stove bathed in olive oil, add the vegetables, starting with the garlic and onion, then the zucchini, mushrooms, carrots and herbs.  Season the vegetables with salt, pepper and whatever you prefer, and cover the pan for a moment so that they can cook faster. Just before placing the rice in the pan with the vegetables, add some amaranth to make our dish even more nutritious. Finally, add the rice and mix everything well.  Add a little more spices and Ceimayá’s Forest Honey: Orange Blossom to give it a sweet touch. Leave the whole mixture in the fire for 5 minutes and it is ready to serve. This dish can be served with a protein of your choice such as pieces of chicken, shrimp, beef, etc.
