Ingredients:
– 1 1/4 cup butter (160 g)
– 2 egg yolks
– 2 cups flour
– 1 1/4 cups of sugar
– 1/2 cup Ceimayá’s Desert Honey: Mezquite Blossom
– 1 teaspoon of baking powder
– 1 teaspoon of fresh or powdered ginger
– 1 teaspoon vanilla
– 1/2 teaspoon cinnamon powder
– 1/2 teaspoon cloves
– 1/4 teaspoon nutmeg
For the glaze:
– 1 egg white
– 1 3/4 cup powdered sugar
– Vegetable coloring
Preparation:
For the cookies, put all the ingredients together in a bowl, knead until you obtain a compact preparation that does not stick to your hands. Cover with plastic wrap and refrigerate for 30 minutes. Then, remove the dough and stretch it and cut out figures with Christmas cookie cutters, place them carefully on a previously buttered baking tin and bake at 180°C for 5 to 8 minutes until the edges are lightly browned. Once ready, let them cool and remove them to cool completely. For the glaze, beat the egg white until frothy. Add the powdered sugar. Then color as you like and paint the cookies decoratively with the help of small piping bags.
