We started this year with salads and healthy ginger shots, but now we are adding to our 2022 recipes some sweetness. This carrot cake recipe replaces many of it’s common ingredients with healthier ones, making it lighter but still delicious. We hope you give yourself a treat and try this dessert at home!
Ingredients:
2 Cups of grated carrots
1 Cup of pecans cut in half
3 Eggs
1 Cup of coconut oil
2 1/4 Cups of almond flour
7/4 Cup of Desert Honey: Mesquite Blossom
2 Teaspoons of cinnamon
2 Teaspoons of baking soda
2 Teaspoons of salt
3 Teaspoons fo vanilla extract
Preparation
Preheat the oven to 200ºC and grease a mold. Sift the dry ingredients. Blend the pecans and reserve. Mix the honey, the oil, the eggs and the vanilla, add the dry ingredients and finally the carrot and nuts. Pour into the pan and bake for 50 minutes.
